The Lab
Behind glass there is another rhythm.
Jars, columns, coils. Citrus resting in alcohol. Herbs sinking. Bottles without labels yet. The work no one films because it takes too long.
We do not make everything. We choose what matters:
- A vermut that tastes like this city at dusk.
- A bitter that smells like orange blossom and stone.
- A gin where you can actually name three of the botanicals.
Sometimes a guest will be handed a glass of something that does not appear on any menu. It might never appear again.
The Lab is not a show. It is the part of the bar that keeps the rest honest.
